Mixed Fried Noodles

Ingredients:

  • 1/2 cup Home Choice Pepper shrimps (pre -soaked and drained)
  • 170g HOME CHOICE BONELESS SALT FISH (pre–soaked, drained & flaked)
  • 1lb cooked noodles
  • 1 large sweet pepper sliced
  • 1 large onion chopped
  • 4 cloves garlic finely grated
  • 1/2 cup mixed vegetables
  • 1/2 cup Soya sauce
  • 2 tbsp oyster sauce
  • 1/2 cup vegetable oil
  • I tbsp finely grated ginger
  • 1 tbsp corn flour
  • 1 cup water
  • 1 stalks celery chopped
  • 1 tsp MSG
  • 2 stalk scallion chopped
  • 2 tbsp salt
  • 1 cup shredded cabbage or Pak Choy

Method:

  1. Boil noodles until tender. Add 2 tbsp vegetable oil & salt to water. Strain and cool.
  2. Heat oil in frying pan or wok, add celery, sweet pepper & onions, sauté for 1 minute, add garlic, ginger, salt fish & shrimp and stir fry for another minute.
  3. Add noodles and stir fry continuously for 3 minutes.
  4. Add mixed vegetables and mix thoroughly for 1 minute.
  5. Mix I cup water with Soya Sauce, Oyster Sauce & corn flour.
  6. Mix in corn starch water in noodles along with MSG.
  7. Mix in shredded cabbage or Pak Choy in the final minute before turning off the fire.
  8. Add chopped scallions and mix well. Garnish with a sprinkle of chopped scallions & finely shredded cabbage.

Tip: For a better result boil noodles and refrigerate overnight, and add cold when ready to fry.
